Cream-filled Carrot Cake Muffins
I followed the recipe exactly, except for my total reckless abandon when it comes to measuring ingredients. I got fourteen generous sized muffins, instead of the twelve indicated in the recipe. Something about living at a high altitude makes cakes and muffins rise better. I thought they turned out great and I will definitely make them again. Soon, probably.

My first basket 5/26/12
Hey there! Thanks for reading my new blog! I just became the Volunteer Site Coordinator (VSC) for a Bountiful Baskets site in a tiny town in Colorado. I learned about Bountiful Baskets from friends online, but since I live in such a remote place, there were not any sites close by. After working on this for about a year and a half, I was finally able to open a site! This past weekend was my first time even participating and it was a lot of fun. I am impressed with what we got!
So the purpose of this blog is going to be to breakdown what I get in my baskets each time, compare the value with Walmart and to share how I am using the produce that I receive.
The prices here are from my local Walmart.
Fuji apples – 2 lbs – $.97/lb = $1.94
Peaches – 1 lb 6 oz – $1.98/lb = $2.73
Bananas – 2 lb 10 oz – $.52/lb = $1.37
Valencia oranges – 4 – $.58/each = $2.32
Cantaloupe – 1 – $1/50/each = $1.50
Baby carrots – 4 lbs – $2.94/ 2lb bag = $5.88
Romaine lettuce – 1 head – $1.48/head = $1.48
Artichokes – 2 – $2.50/each = $5.00
Yellow bell peppers – 2 – $1.78/each = $3.56
Tomatoes – 1 lb 4 oz – $1.94/lb = $2.43
Corn – 5 ears – $.33/each = $1.65
Grand total: $29.86
Contribution to Bountiful Baskets: $15.00
Savings: $14.86
